IMMUNITY BOOSTING DRINK

Ingredients:

  • 100 gms Dry ginger
  • 5 gms Mint
  • 10 gms Turmeric
  • 5 gms Lemongrass

Method:

  • Bring water to a boil on the stove.
  • Add the ingredients and boil together for a minute, then reduce and let the ingredients gently simmer and steep in the water for a few minutes.
  • Strain into a mug and drink.
  • Pour the rest into a pitcher.
  • Simmering helps you extract the maximum flavour and benefits of fresh ginger, mint, turmeric and lemongrass.


SPICED KHICHDI

Ingredients:

  • 50 gms Moong dal
  • 50 gms Raw red rice
  • ¼ tsp Turmeric powder
  • 1 tsp Garlic
  • ¼ tsp Cumin
  • ½ piece Ginger
  • 1-inch piece Cinnamon
  • 1 tbsp Ghee
  • ¼ tsp Green chilli
  • Salt to taste

Method:

  • Take a cup of rice and dal together, rinse with water, drain and add to pressure cooker, with 2 cups of water and ¼ tsp of turmeric powder.
  • Close the lid of the cooker and let it boil.
  • During this time, heat the ghee in a kadai or saucepan, add the rest of the ingredients, stir frequently and sauté till light brown.
  • Add cooked rice and lentils together with salt to taste and mix well.


HEALTH ELIXIR

Ingredients:

  • 50 gms Beetroot
  • 50 gms Carrot
  • 10 gms Ginger
  • 10 gms Turmeric
  • 100 ml Orange juice
  • 1 tsp Lemon juice
  • Black salt to taste

Method:

  • Blend all ingredients together in a juicer and pour into a mug.
  • Add orange juice, lemon juice, some black salt, mix well, and drink.


DETOX TONIC

Ingredients:

  • 30 gms Apple
  • 150 gms Carrot
  • 120 ml Orange juice

Method:

  • Blend the carrot and apple together in a juicer, and pass through a strainer into your mug.
  • Add orange juice and blend well.
  • Enjoy your delicious revitalising drink.


THREE BEAN SUKHE (DRY)

Ingredients:

  • 50 gms Chick peas
  • 50 gms Kidney beans
  • 50 gms Beans
  • 100 gms Coconut
  • ¼ tsp Jeera
  • 1 small piece of Cinnamon
  • 3 Cloves
  • ¼ tsp Turmeric powder
  • 2 tsp Ghee/Virgin coconut oil
  • 100 gms Chopped onion
  • 1 tsp Chopped garlic
  • ½ tsp Chopped ginger
  • ¼ tsp Mustard seeds
  • 10 Curry leaves
  • Salt to tast

Method:

  • Soak the chickpeas and kidney beans separately overnight.
  • Boil separately and set aside.
  • Steam the beans and set aside.
  • Coarsely grind the coconut, jeera, cinnamon, cloves and turmeric powder and set aside.
  • For tempering, heat the ghee in a pan, add mustard seeds and allow to them to crackle. ‑en, add curry leaves, chopped onion, garlic, ginger and sauté till it turns a pink colour.
  • Add the cooked three varieties of beans and sauté.
  • Add salt to taste.
  • Add in all the other ingredients – coarsely ground spices and powder and mix well. Cook for another 5 minutes.
  • Your dish is ready to serve.


BRINJAL CHUTNEY

Ingredients:

  • 2 Large Brinjal
  • 100 gms Chopped onion
  • 1 tsp Jeera powder
  • 2 tbsp Lemon juice
  • ½ tsp Freshly ground pepper powder
  • 1 tsp Chopped green chilli
  • Salt to taste

Method:

  • Skewer the brinjal and fire roast on a gas stove, till the skin is nicely charred.
  • Allow to cool, then take off the blackened peel and mash flesh and set aside.
  • To this, mix the rest of the ingredients and serve.
